While his friends were playing football, Sean was working for free on weekends at the Hilton Hotel in Leeds, where he subsequently completed his apprenticeship.With a career spanning over twenty years, Sean brings a wealth of experience to Astral, having worked in some of the finest Hotel restaurants in Europe and Australia. Sean and his team are well on the way to achieving their goal of making Astral one of Australia's best fine dining restaurants.From customised menus in the Private Dining Room to the fast and fabulous pre-theatre menu, Sean is also passionate on his serious tasting menu for the main dining room.Add a passion for wine, an international brigade, an eclectic floor staff and you have one savvy chap running one very successful business.
