THE T4T TOKOTINI Sydney hot spot TOKO Restaurant + Bar in Surry Hills created the official signature cocktail for the 2009 Table4Ten Event. The Table4Ten Tokotini is a stunning dark fuchsia-coloured cocktail created by TOKO Restaurant + Bar’s own award-winning Sake Sommelier Paul Birtwistle. Birtwistle used fresh POM Wonderful 100% Pomegranate Juice as the key ingredient for the cocktail, complemented by an intriguing mix of grenadine, lemon juice, rhubarb bitters, gin and Japanese plum wine Choya Umeshu. The signature cocktail was available at TOKO Restaurant + Bar throughout the month of September to raise funds and awareness for the Prostate Cancer Foundation of Australia as part of Prostate Cancer Awareness Month – with $5.00 from every cocktail sold going towards the charity. TOKO Restaurant + Bar is known for its unique and innovative cocktails concocted by Birtwistle, who left his post at London’s Zuma Bar to join the team at TOKO Restaurant + Bar for its opening in February 2007.“While creating the Table4Ten Tokotini was a bit of fun, it was also very rewarding knowing that the cocktail would play a significant part in raising funds and awareness for the Prostate Cancer Foundation of Australia charity,” he said.
